To make your pancakes, you will need the following ingredients:

  • 1/4 a cup of coconut flour
  • Half a cup of freshly made almond milk, preferably unsweetened
  • 2 tablespoons of baking soda
  • 4 organic eggs

  • 2 tablespoons of coconut oil

You want to start by whisking the eggs together, and then add all the ingredients into the mixing bowl–except the coconut oil. Combine all the ingredients–sans the coconut oil and the blueberries–in a mixing bowl. Make sure the ingredients are blended well. You do not want to see lumps nor do you want the blend to be watery. Add more flour if necessary. Add the blueberries when you are done mixing, and fold them in.

Preheat the skillet, and add the coconut oil. Heat each pancake for about 4 minutes or until they brown on each side, and enjoy.
