The NFL season is now in full swing. With week seven of the season coming to an end, I thought it was a good time to share some fun and easy paleo dishes that are perfect for Sunday football. Just because you are committed to the paleo diet does not mean you cant enjoy snacking while cheering on your favorite teams!
Mini Steak Bites (Ultimate Paleo Guide)
• 1 lb Stew Meat (pre–cut)
• 4 tbsp. coconut Oil
• Sea salt and ground pepper
1.) If you’re working with a “budget” piece of meat, prepare it by removing fat and gristle and cutting it into 1-2 inch chunks.
2.) Sprinkle the pieces with a tasty amount of sea salt and freshly cracked peppercorns. Roll them around a bit, so that you the meat is well coated.
3.) Heat a skillet to high heat and melt 2 tbsp of oil. Watch and stir the oil in the pan until it becomes browned. Make note that this will be a touch smoky, so you might want to turn on the fan. It’s OK – it is supposed to be that way. We want the oil and the pan nice and hot.
4.) Once the pan is sizzling, add the steak bites and cook for about 45 seconds on one side before flipping and cooking for another 45 seconds on the second side. Reduce the cooking time on the 2nd side if it takes you a good 30 seconds to flip all those little suckers.
5.) Remove immediately from heat and place on a nice serving platter.
6.) Add the remaining 2 tbsp of oil to the drippings in the pan and allow them to melt while being sure to pick up all the pan drippings.
7.) Pour this “sauce” into a nice little bowl for fondue or just dump all the yummy goodness right on top of the steak bites.
8.) Serve with toothpicks to turn the bites into finger food.
Buffalo Chicken Poppers (Ultimate Paleo Guide)
• 6 Mini Peppers (halved)
• 1 c. Chicken (cooked and shredded)
• 3 tbsp. onion
• 1 tbsp. jalapeno
• 1 tbsp. Olive Oil
• 2 Hard Boiled Eggs
1.) In a small bowl, mix together shredded chicken, onion, and hardboiled eggs.
2.) In a small dish, sauté oil with diced jalapeño until well combined
3.) Drizzle sauce over chicken mixture and combine well.
4.) Spoon chicken mixture into pepper halves.
Rolled Sandwiches (Paleo Leap)
• 1 ½ cups cooked ground chicken;
• 3 tbs. green onions, finely chopped;
• 1 large hard-boiled egg, chopped;
• ¼ cup celery, finely chopped;
• 1/3 cup homemade mayonnaise;
• Sea salt and freshly ground black pepper to taste
1.) In a bowl, combine the chicken, the green onions, the celery and the egg and toss gently.
2.) Add the mayonnaise. Season to taste, and stir to blend well.
3.) Refrigerate 15 to 20 minutes.
4.) Serve on Lettuce Leaves
