Two Delicious Paleo Breakfast Recipes

There is no denying that breakfast is the most important meal for your body. It helps give you the necessary nutrients and vitamins to energize your day. People are always on the run with their busy schedules, today I’m happy to share two delicious paleo recipes that aren’t hard to make and are so tasty.

The Weekend Warrior Omelette (The Paleo Leap)

Ingredients:
2 large free range organic eggs, scrambled
1 tsp olive oil
2 green onions, diced
1 cup fresh organic spinach leaves
2 organic small tomatoes
½ fresh avocado sliced into bite sized pieces

Directions:
1. Heat olive oil on low in nonstick omelette pan.
2. Saute onions until tender.
3. Add eggs and cook on low for about 2 minutes.
4. Add remaining ingredients.
5. Fold and flip omelette until eggs are fully cooked.

Potato Pesto Breakfast Skillet (Lexis Clean Kitchen)

Ingredients:

Pesto:
1 Cup fresh basil
1 Cup fresh kale
1/3 cup raw slivered almonds
2 large cloves garlic
1 tsp. lemon juice
½ tsp. ground pepper
2 tbsp. extra virgin olive oil

Everything Else:
1 large Sweet potato sliced thin
2-4 purple potatoes
4 eggs
2 tbsp. extra virgin olive oil

Instructions:
1) Heat oil in skillet
2) Add in sliced potatoes and cook for 5 minutes
3) Add in 1 tbsp. of water and cover skillet with lid
4) After 5 minutes, remove lid and toss potatoes
5) Toss pesto ingredients into food processor and combine
5) Pour pesto over potatoes and toss
6) Crack in eggs and let cook for 5-10 minutes
7) Once eggs have cooked through, remove from heat, and serve hot.
